Ghanaian (from Ghana, West Africa):  red-red (spicy black-eyed peas, palm-oil) served with rice and plantains, efo riro (okra and/or spinach with palm oil) served with white yams and plantains, spicy vegetable peanut stew served with couscous and plantains

 

Indian:  curried potato/cauliflower and peas, curried okra and mushrooms, samosas, dal, apricot chutney, basmati rice, mango lassi, naan, rice pudding

 

Italian:  eggplant parmesan, sausage lasagna, vegetable lasagna, fettuccine with Italian “sausage” sauce, spaghetti with marinara and mixed vegetables, variety of pizzas, orange red-onion salad, Italian butternut squash soup

 

West Indian: peas and rice, curried tofu with mixed vegetables, curried seitan with mixed vegetables, “beef” patties made with seitan or tofu, channa, callaloo

 

Mexican: spicy tofu tamales, spicy black bean tamales, yellow rice, roasted vegetable quesadillas, black bean and corn quesadillas, tofu tacos, black bean tacos; Vita’s award winning three-bean chili, "chicken" tortilla soup, mango salsa with avocado and black beans, jicama/mango salsa, traditional tomato salsa

 

  Soul Food: macaroni and “cheese,” greens, garlicky kale, fried green tomatoes, cumin-spiced potato salad, collard    green wontons, dressing, orange-glazed sweet potatoes, black-eyed peas, creamed corn, corn bread

 

Thai and Vietnamese:  cashew noodle salad, Vietnamese Soups, Thai Soups, stir-fried tofu and vegetables, Pad Thai, vegetable egg rolls

 

Sandwiches:  barbecue tofu, avocado/sprout sandwiches, and veggie-burgers, hummus pitas

 

Other Vegan Soups: corn chowder, black bean, chicken and dumplings

 

Breakfast:  plain pancakes, blueberry pancakes, banana nut pancakes, sweet potato muffins, stewed apples, grits, scrambled tofu, kale/Italian “sausage” quiche, quiche with spinach and red, yellow and orange peppers, a variety of other quiches, cinnamon rolls, brandy buns, angel flake biscuits

 

  Desserts: blue berry cobbler, peach cobbler, chocolate cupcakes, chocolate loaf cakes with strawberry syrup, peanut butter cookies; peach, strawberry, mango, grapefruit, pomegranate, hibiscus sorbet, pear sorbet

 

  Drinks:  Hibiscus tea (made with dried hibiscus flowers, fresh ginger root, and lemon), strawberry lemonade, lemonade champagne, herbal teas, hibiscus mimosas, orange juice mimosas

FEES

Fees are based on the type of service being requested, number of participants, number of entrees, prep-time, and travel.  Estimated fees will be calculated upon an initial consultation.
